I just discovered my newest crowd pleasers after a recent trip to Vine & Tap and they are glorious. Gorgonzola Stuffed Dates – wrapped. in. bacon. I knew instantly that I would need to recreate these little bites of heaven as soon as possible.
Dates [whole & pitted]
Bacon [1/2 strip per date]
Gorgonzola Crumbles [goat cheese is nice too]
brown sugar & balsamic vinegar [optional]
Cut a small sliver in each date and stuff with gorgonzola crumbles. For a little added sweetness, sprinkle the strips of bacon with a little brown sugar – totally optional. Wrap each date with bacon, brown sugar side in.
Place each wrapped date one inch apart on a baking rack, with a lined cookie sheet underneath. Bake at 375°F for about 20-30 minutes or until bacon is cooked and crisp. Let cool, drizzle with balsamic vinegar – also totally optional – and enjoy!
